Fork Food Lab is a nonprofit food incubator and shared commercial kitchen in South Portland, supporting food entrepreneurs, trucks, and producers through flexible production space, equipment access, and community-driven infrastructure.

Fork Food Lab is a nonprofit food business incubator and shared commercial kitchen that provides space, equipment, and infrastructure for emerging and established food entrepreneurs. The facility supports a wide range of users, including food trucks, caterers, packaged goods producers, and small-batch manufacturers working to grow within Maine’s local food economy.

The project expands the idea of a traditional commercial kitchen into a collaborative production environment. Multiple users operate within a shared system of prep kitchens, storage areas, and processing spaces, allowing businesses to scale without the burden of standalone facilities.

Located in South Portland, the facility plays a key role in strengthening regional food networks. It provides a structured yet flexible environment where production, testing, and small-scale distribution can occur within a single coordinated site.

The design supports continuous, high-volume operation with infrastructure tailored to both production and experimentation. Spaces include commercial kitchens, teaching areas, pop-up retail zones, and event space that allows members to engage directly with the public and test new products in real time.

Specialized systems support the needs of diverse users, including dedicated accommodations for food trucks and mobile vendors. On-site infrastructure allows for safe handling and transfer of wastewater, grease, and byproducts through controlled collection and treatment systems before entering municipal systems.

The facility also prioritizes adaptability, allowing spaces to shift between production, education, and community programming. This flexibility supports both day-to-day operations and periodic public-facing events that activate the building.
